How MSSW LLC Delivered a Full Kitchen Island and Pass-Through for Bukkarroos Burritos with Marlin Construction

When a fast-casual restaurant brand is opening a new location, the kitchen has to be built to perform from day one. Tight timelines, strict food safety requirements, and the need for custom-fit equipment make commercial stainless steel fabrication one of the most critical trades on the project. MSSW LLC, an AWS-certified custom metal fabrication shop based in Durham, NC, recently completed exactly that kind of work — delivering a full stainless steel kitchen island buildout for Bukkarroos Burritos in partnership with general contractor Marlin Construction.

What the Scope Included

The project centered on a large open kitchen island — the kind of front-of-house layout common in fast-casual concepts where customers can see food being prepared in real time.

MSSW fabricated and installed:

  • Custom stainless steel counter surfaces spanning the full length of the service island

  • Cold well cutouts integrated directly into the countertop for food holding

  • A stainless-framed pass-through window built into the adjacent column, allowing kitchen staff to move product efficiently between the back-of-house and the service line

Every component was fabricated to fit the brand's specific layout, coordinated with Marlin Construction's schedule, and delivered fully protected with Nitto surface film to prevent damage through final install.

Why Stainless Steel Is the Standard for Commercial Kitchens

Stainless steel isn't just the industry standard for restaurant kitchens because of how it

looks. It earns its place on every NSF-compliant commercial build for practical reasons:

  • Sanitation: Stainless resists bacterial growth and holds up to the harsh chemicals used in daily kitchen cleaning cycles

  • Durability: Unlike other surface materials, stainless doesn't warp, crack, or degrade under heat and heavy use

  • Code compliance: NSF and local health department requirements often mandate stainless for food-contact and food-adjacent surfaces

  • Longevity: A properly fabricated stainless counter can outlast multiple restaurant remodels

For a brand like Bukkarroos Burritos, where the kitchen is visible to every customer walking through the door, the finish and fitment of the stainless work also carries a direct impact on the guest experience.

The Value of a Shop-to-Site Fit

One of the most common pain points for general contractors on restaurant buildouts is field coordination between custom fabricated components and the as-built conditions on site. When a fab shop does its homework upfront — taking accurate dimensions, accounting for adjoining trades, and building to tight tolerances — it eliminates costly field corrections and keeps the schedule moving.

On the Bukkarroos project, MSSW delivered components that arrived ready to install, with the Nitto protective film in place right through the final stages of construction. That kind of attention to detail is what GCs and project managers count on when they're managing multiple trades against a hard opening date.
